Citrus polenta pancakes

½ cup polenta
30 g rice flour
Pinch salt
1 egg
½ cup milk
1 orange, zest and juice
30g melted butter
1 dessertspoon coconut oil for frying
- Mix together all dry ingredients
- Beat the egg, then add in the melted butter and milk
- Fold in the dry ingredients. Mix until just blended. Fold in the orange juice and zest
- Allow to rest for 10 minutes before frying
- Melt some coconut oil in a skillet on medium high. Dollop in about 1/2 cup of batter. Wait for the bubbles to appear and begin popping, then flip over the pancake. Cook until browned
Spicy Coconut Fish Cakes
1/2 red capsicum
1 cm piece fresh ginger
2 cloves garlic
1 long red chili
1/2 bunch coriander
Juice and zest of 2 limes
3 tablespoons of chilli sauce
6 spring onions, chopped
500 g white fish, minced
100 ml coconut milk
1 egg
Pinch salt
Coconut oil
- Process capsicum, ginger, chili and garlic. Add chili sauce, fish and coconut cream. Then add lime and coriander with spring onions, egg and salt.
- Combine gently, and form into small patties. Heat a skillet with a little coconut oil. Pan fry for about 5-7 minutes each side.
